Oatmeal Energy Bars
- ½ c. Applesauce
- ¼ c. Oat Bran
- ¼ c. Coffee Beans
- ¼ c. Millet Flour
- ¼ c. Craisins
- ½ c. Peanut Butter
- 1 tsp. Vanilla Extract
- ½ tsp. Cinnamon
- ¼ c. Almonds
- ¼ c. Flax Seeds
- 1 c. Rolled Oats
- ¼ c. Honey
- ½ c. coconut oil
- ½ c. dark cocoa powder
- 1 tsp vanilla extract
- powdered sugar to taste
- salt to taste
- Spread oats and oat bran in a 10- by 15-inch baking pan. Bake in a 300° oven until oats are toasted, about 25 minutes. Stir frequently to prevent scorching.
- Meanwhile, place flax seeds in a 10- to 12-inch frying pan over medium heat. Shake often or stir until seeds are golden, about 7 minutes. Butter the hot baking pan; set aside.
- Pour into a large bowl. Add craisins, chocolate chips, coffee beans, almonds and cinnamon; mix well. Mix hot oats and oat bran into mixture.
- In the frying pan, warm applesauce and honey over medium high heat and quickly stir in the peanut butter, almond butter and vanilla extract.
- At once, pour over the oatmeal mixture and mix well. Quickly spread in buttered pan and press into an even layer.
- Boil water. Place a dry glass or metal bowl over simmering water and add coconut oil. Once melted, add cocoa powder and stir until well mixed. Add vanilla and powdered sugar, if desired.
- Pour chocolate over oatmeal bars. Sprinkle salt over the chocolate before it hardens.
- Allow the bars to cool slightly and the chocolate to set before placing in refrigerator. The chocolate will warp if cooled too quickly.
- When firm and cool, cut into bars. Wrap individually in foil. Store in freezer.
