Oatmeal Energy Bars


  • ½ c. Applesauce
  • ¼ c. Oat Bran
  • ¼ c. Coffee Beans
  • ¼ c. Millet Flour
  • ¼ c. Craisins
  • ½ c. Peanut Butter
  • 1 tsp. Vanilla Extract
  • ½ tsp. Cinnamon
  • ¼ c. Almonds
  • ¼ c. Flax Seeds
  • 1 c. Rolled Oats
  • ¼ c. Honey
  • ½ c. coconut oil
  • ½ c. dark cocoa powder
  • 1 tsp vanilla extract
  • powdered sugar to taste
  • salt to taste

  1. Spread oats and oat bran in a 10- by 15-inch baking pan. Bake in a 300° oven until oats are toasted, about 25 minutes. Stir frequently to prevent scorching.
  2. Meanwhile, place flax seeds in a 10- to 12-inch frying pan over medium heat. Shake often or stir until seeds are golden, about 7 minutes. Butter the hot baking pan; set aside.
  3. Pour into a large bowl. Add craisins, chocolate chips, coffee beans, almonds and cinnamon; mix well. Mix hot oats and oat bran into mixture.
  4. In the frying pan, warm applesauce and honey over medium high heat and quickly stir in the peanut butter, almond butter and vanilla extract.
  5. At once, pour over the oatmeal mixture and mix well. Quickly spread in buttered pan and press into an even layer.
  6. Boil water. Place a dry glass or metal bowl over simmering water and add coconut oil. Once melted, add cocoa powder and stir until well mixed. Add vanilla and powdered sugar, if desired.
  7. Pour chocolate over oatmeal bars. Sprinkle salt over the chocolate before it hardens.
  8. Allow the bars to cool slightly and the chocolate to set before placing in refrigerator. The chocolate will warp if cooled too quickly.
  9. When firm and cool, cut into bars. Wrap individually in foil. Store in freezer.
